Summer squash is at its height this month. With hundreds of ways to whip up a tasty dish with this versatile vegetable, you should rush to a farmers market to bring home a full basket. Some of the best recipes include slow cooker ratatouille, low-carb yellow squash casserole, stuffed summer squash and squash relish, but the simplest way to use these delicious veggies is to throw them on the grill. Slice the squash in 1/4-inch-thick pieces and place them inside a square of aluminum foil. Sprinkle with lemon zest, lemon juice, a pat of butter, black pepper and cayenne pepper to taste. Wrap the foil to create a packet and cook on the grill for about 30 minutes to ensure they’re tender.
